Biography

Major Carew was an Irish officer serving in the British army during the American Revolution. He employed Joseph Corré as his personal cook. When Carew evacuated New York with British forces on November 25, 1783, Corré chose to remain behind rather than depart with him, going on to become host of the City Tavern.
